About: Burdock is a hardy biennial, growing well in most soil types. Loose soil makes root harvest easier. Burdock produces large leaves in first year, and purple flowers (seed pods are burrs) in second year. Roots can be harvested in either year, and are used for medicinal or culinary purposes. The roots are best harvested in fall, after a first frost. Roots are rich in vitamins, traditionally used to support the liver and for reducing inflammation. Staple root (known as Gobo) in traditional Japanese cooking.
