Heirloom Flint Corn / Flour Corn

Ecologically grown on our small-scale farm

7 oz bag

We have a small selection of two kinds of flint corn/ flour corn to choose from. This heirloom corn is very special and the colours are absolutely beautiful!

Traditionally this type of corn is used for making corn flour for baking (e.g. cornbread, muffins, corn pudding), or masa for tortillas, tamales etc. Simple instructions are provided for how to soak, cook, and nixtamalize the corn, making it more digestable and the nutrients more available. Also included is a recipe for making delicious tortillas. 7 oz corn makes aprox 20 corn tortillas.

After cooking the corn can be dried for storage, or processed in a grain mill, blender or food processor. Note that flour corn is a bit easier to grind than flint corn.

Choose your corn below:

  • Cascade Ruby-Gold Flint Corn
  • Iowne's True Blue Flour Corn

Grown using ecological methods and organic practices here at Swallowtail Farmstead.

We are grateful for all those who have saved seeds, tended land, and passed on plant knowledge before us. We live on Treaty 1 territory, traditional territory of the Anishanaabeg, Cree, Oji-Cree, Dakota, and Dene Peoples, and the National Homeland of the Red River Metis.
As a small act of reparation a portion of our farm proceeds is donated to Indigenous-led food security programs in Manitoba.

For all Farm Store orders you will receive an email with specific pick-up / delivery details.
